Herb Polenta with Green Beans, Shitake Mushrooms and Creamy Scallion Vinaigrette.

I had left over polenta from making Bacon Wrapped Polenta and Eggs and needed to figure out how to use it up. I also had green beans left over from Farmers’ Market Salad with Spiced Goat Cheese Rounds. So, I suppose this creation was the result of piecemealing leftovers together in conjunction with being too lazy to go to the grocery store.

I have to say that the over all dish wasn’t as good as I had hoped, but still edible. So I suppose that’s what matters in the end. Also, because this dish doesn’t have my 100% vote of confidence, I won’t post my recipe. Perhaps one day, I’ll refine it and update this post. But don’t hold your breathe, I’m also pretty lazy.
