Strawberry and Fig Salad with Parmesan

It is just getting too darn expensive to keep buying new ingredients every day to make something new to post up here. So, you will definitely be seeing a lot of familiar ingredients. Just an fyi, you guys.

This is a fun salad with some fruit, but the shallots in the dressing really makes it a savory and satisfying dish. I’m not too particularly fond of salads that end up tasting and feeling like a light dessert. So this one made the grade for me.

The salad ingredients are pretty straight forward. I’m going to include the recipe for the Pomegranate-Cumin Dressing


Pomegranate-Cumin Dressing

Makes about 1 cup
Recipe by Sarah Tenaglia


  • 7 1/2 tablespoons extra-virgin olive oil
  • 4 1/2 tablespoons white balsamic vinegar
  • 3 tablespoons sliced fresh mint leaves
  • 1 1/2 tablespoons pomegranate molasses
  • 1 tablespoon ground cumin
  • 6 tablespoons minced shallots


If you can’t find pomegranate molasses at the supermarket or a Middle Eastern store, make your own by boiling 1 cup pomegranate juice until reduced to 3 tablespoons syrup, about 15 minutes.


  • Whisk first 5 ingredients in bowl. Mix in shallots; season with salt and pepper.
