Left over salad!
I had some left over quinoa and eggplant in the fridge and I needed to eat that up. Along with some sliced up salami, It made for quite a tasty salad.
The generic dressing with lemon and olive oil and a bit of salt and pepper made it a very light and tasty meal.
Plus, all the dark greens make me feel like I’m eating healthier than I actually am.
