To me honest with you, I have no idea what I put in there. There was a base of thawed and drained frozen spinach, sun dried tomatoes and a dal-lop of mascarpone cheese in the center.
The crust was just rounds cut out from slices of white bread. The filling was some combination of eggs, milk, and seasonings.
It was late when I made this. It was for a potluck breakfast after training with my running team. They weren’t too bad!
