Egg Curry

I didn’t really have any other form of protein on hand, but I did have a bunch of eggs!

This curry (like most of the curries I make) is more of a staple type dish. I started off with a bag of frozen mixed vegetables. The bag i happened to have in the freezer was “Perfect Stir Fry”  and had veggies like mushrooms, water chestnuts, broccoli, and baby corn. Pretty yummy.

I poured the entire bag of frozen veggies into the pan and heated them up until they were no longer frozen. Then I added a few eggs to the pan and scrambled them all up with the veggies. The kind of curry i use is called Golden Curry and looks like this. It’s not a powder, but more of a block that melts and mixes with water to form the curry sauce.

So I added a few squares of curry and a few cups of chicken stock. Topped with fresh cilantro. It was pretty yummy!
